Olive oil is not suitable for cooking as its smoke point is very low, less than 200 degree Celsius. Olive/extra virgin olive oil is normally use for salad dressing. VCO is a good oil option for cooking.
I would recommend using vegetable oil. Though olive oil is also a good option but since it has a low smoke point you may roast the veggies more than required.
