Can I use olive oil to roast veggies? Or do I need to stick to steaming?

Olive oil is not suitable for cooking as its smoke point is very low, less than 200 degree Celsius. Olive/extra virgin olive oil is normally use for salad dressing. VCO is a good oil option for cooking.
