Our son usually drools all night. Should we change the covers every day?

It should be practically difficult to change covers every day. But if you can afford it , like washing , drying etc on daily basis , it should be fine. But it should be fine even if you change it on weekly basis.

I would not just change the covers, but also make sure that I put the pillow in the wash as well. The droll seeps through the covers. If you remove the cover, you will see drool stains on the pillow....
