kidney beans, chick peas, black eyed peas, paneer, tofu, all lentils. I have gestational diabetes too, but my doctor told me I have to eat a little carbs(reduced, but not zero) which is essential for the development of the baby and energy for mom. you can also try konjac/shiratake noodle which is zero carb noodles when you crave for eating something resembling normal food 😊
You can Google ‘protein food for vegetarian’. It’s quite easy to search and have a long list of varieties :)
