Most mums I know who've done bunion surgery took about six weeks before feeling ready to go back to work, though honestly, it really depends on what your job entails. If you're desk-bound, some managed to work from home or do light duties from week three or four, but if you're on your feet all day, six to eight weeks is more realistic before you can manage properly without pain or swelling getting in the way. The good thing is the incisions are usually tiny (just a few small marks), so recovery feels less dramatic than you'd expect, but you do need to be patient with the downtime. I'd say plan for at least four to six weeks off to be safe, and maybe chat with your surgeon about your specific work setup, they can give you a clearer timeline based on what they actually do.
