Is she your main help? I think it's hard to respectfully change her mind. They may defer to authority/publications so would it help if you can find some internet articles that support your view, or tell her it's the doctor's specific instructions? Now that it's Covid period, it may be a point to raise to ensure she always washes her hands, the baby is not vaccinated after all.
