Roasted Cauliflower Gnocchi
- 1 cauliflower head, chopped into small florets
- ¼ cup fresh sage leaves
- 3 tbsp olive oil
- ½ tsp salt
- ¼ tsp pepper
- 1 gnocchi (fresh of frozen)
- ¼ cup grated parmesan
- Preheat the oven to 400°F. In a bowl, toss the cauliflower, sage, oil, salt, and pepper, until well-coated. Arrange on a rimmed baking sheet and place in the oven to roast, about 25 to 30 minutes, or until the cauliflower is golden brown and fork-tender (you can toss the cauliflower at the mid-roasting mark to ensure even baking.)
- Cook the gnocchi according to package instructions, about 15 minutes before the cauliflower is done. Remove from heat. Divide the gnocchi among 4 bowls. Top with the roasted cauliflower, and sprinkle with the parmesan.
