Vermicelli Kunafeh

  • 1 cup Sugar
  • 1 cup water
  • 1/2 tsp lemon juice
  • 1/4 tsp saffron essence , optional
  • 300 g vermicelli (two packets)
  • 4-5 tbsps unsalted butter
  • 1/4 tsp yellow food colour
  • 1 1/2 cups ricotta cheese or khoya
  • 3/4 cup mozzarella cheese
  • De-shelled pistachios , chopped


  1. In the saucepan, add sugar, water and cook until sugar is dissolved.
  2. Add lemon juice and saffron essence, mix well and cook until thickens and set aside.
  3. In a bowl, add vermicelli and crush well.
  4. Add butter and mix properly.
  5. Take out half quantity of butter coated vermicelli in a separate bowl and reserve for later use.
  6. Add yellow food color, mix well & set aside.
  7. In a baking pan, add colored coated vermicelli and spread evenly.
  8. Add ricotta cheese or khoya and crumbled it with the help of the hands and spread evenly.
  9. Add mozzarella cheese and spread it, lose the edges and again add a layer of reserved butter coated vermicelli.
  10. Bake in a preheated oven at 180 C for 20-25 minutes.
  11. After baking, pour generously warm sugar syrup and garnish with pistachios.
