Cheesy Sweet Potato, Cauliflower, and Leek Puree

3 tsp butter

25 g leeks , washed and sliced

1 sweet potato , peeled and chopped

1 cup boiling water

75 g cauliflower florets scant

¼ cup cheddar cheese , grated.

In a saucepan, sauté the butter and leek for about 3 minutes until soft.

Add the sweet potato and boiling water. Cover and cook for 5 minutes.

Add in the cauliflower and boil for about 5 minutes.

Strain the vegetables, reserving the liquid.

Place the vegetables, 1/3 cup of the reserved liquid, and grated cheese in a blender. Puree until smooth.
