380 g boneless pork shoulder

30 g ginger (cut into thin strips)

1 tbsp minced garlic

75 g shimeji mushrooms

75 g oyster sauce oyster mushrooms

3 tbsp sesame oil

Cornstarch solution (1 tbsp constarch, 1 tbsp water)

2 tbsp light soy sauce

1 tsp mushroom seasoning

1/2 tsp white sugar

3 tbsp Shaoxing wine

Heat 3 tbsp sesame oil and stir fry ginger slices until fragrant & brown. Push it aside and add in minced garlic. Stir fry until fragrant.

Add in pork slices, mushrooms stir fry constantly until cooked.

Add in light soy sauce, mushrooms seasonings, sugar and rice wine. Mix well.

Add in cornstarch solution to thicken the sauce.

Dish up and serve hot with rice.
