What's your favourite pasta sauce recipe?

Matt Preston, one of Masterchef Australia's Judge said "For pasta, the simplier. better" I love humble pmodoro sauce made with fresh tomatoes. Kids will love it with some parmesan added on top. And adults can easily add the heat or spicy-ness just by added paprika powder. Nyum!
