I'm using a fridge lock since both kids are young. I educate them to ask for permission if they need something. So is a habit for them to ask for permission even when sometimes I forgot to lock the fridge.

You need to stand your ground. Before anything why is he opening it? Does he want water or something?

How old is your LO? You can consider getting a fridge lock to prevent from LO opening it again.
