For a 2-year-old, I'd say eggs are probably the most reliable go-to, scrambled with a little milk for extra protein, or a simple omelette, both come together in under five minutes and most toddlers take to them well. Banana pancakes (just banana and egg mashed together) are another easy win, no added salt or sugar needed, which makes it quite suitable for that age. Some mums I know also rotate between plain yogurt with fruit, avocado toast, and oatmeal just to keep things from getting too repetitive, the variety helps if your little one is going through a fussy phase. The trade-off with the fancier options like cream cheese bagels or fruit smoothies is really just prep time versus how adventurous your toddler is feeling that morning, so it's worth having a few simple backups ready. Overall I'd start with eggs and oatmeal as your base, then slowly introduce the others to see what sticks!
