Im a sahm. Any ideas what to make for lunch, for myself and my 1 year old girl?

I used to make porridge, mee sua with 1 tbsp protein (threadfin, salmon, chicken, lean pork, egg or tofu) + 1 tbsp veg (carrot, pumpkin, cabbage, broccoli). Now she is 12 months old. I wish to make lunch that is quick, dont require much monitoring (because she needs constant looking out), nutritious and both me and her can eat it. Can mummies share what you make for your toddlers? That would be so helpful!!

My girl is the same age and honestly, I've been doing a lot of one-pot meals lately because I can't be faffing around in the kitchen either. I do things like chicken and veg fried rice with soft rice, or a simple curry with potatoes, carrots and chicken that I can batch cook and just reheat, then I just break it up smaller for her. Sometimes I'll do noodles with minced meat and loads of soft veg mixed through, so everything is already combined and she can just eat it as is while I eat the same thing. The key for me is making sure whatever I cook can sit in a pot without needing constant stirring, and that the textures are already soft enough for her gums, so I'm not making two separate meals. Your porridge and mee sua rotation is already really solid though, so maybe you just need a few more one-pot options to rotate through so it doesn't get boring.
