This... is on my to-try list: Mocha Ice Box Cake http://www.thecrepesofwrath.com/2014/08/25/mocha-ice-box-cake/ Here is the recipe, taken from the post: Ingredients For the Chocolate Pudding: 2 cups whole milk ½ cup sugar ¼ cup cocoa powder 3 tablespoons cornstarch 1 teaspoon vanilla extract 1 tablespoon finely ground coffee beans 2 egg yolks For the Whipped Cream: 3½ cups heavy cream ½ cup powdered sugar 2 tablespoons cooled brewed coffee 1 teaspoon vanilla extract For Assembly: 1 box graham crackers 1 cup chopped chocolate 2 tablespoons finely ground coffee beans Instructions For the Chocolate Pudding: Whisk together the milk, sugar, cocoa, cornstarch, vanilla and coffee beans in a medium sized pot over medium heat. Whisk until heated through. Whisk the egg yolks in a medium sized bowl, then add the chocolate mixture to the egg mixture, whisking constantly (this is so that the eggs don't scramble). Put the mixture back over heat, stir for 4-5 minutes until thickened, then chill for 1 hour. For the Whipped Cream: In the bowl of a stand mixer, using the medium setting, whisk together the cream, powdered sugar, coffee and vanilla until soft peaks form, about 3-5 minutes. For Assembly: In a 9x13 inch baking dish, line the bottom with graham crackers - it doesn't have to be perfect. If you need to break some of the crackers to fit them in, go for it. Spread ⅓ of your pudding over the graham crackers, then ⅓ of the whipped cream. Sprinkle ⅓ of your chopped chocolate over the whipped cream, then sprinkle ⅓ of your ground coffee on top of that. Repeat this process two more times: graham crackers (press down on them so that you can fit all 3 layers), pudding, whipped cream, chopped chocolate and ground coffee, then one more layer of graham crackers, pudding, whipped cream, chopped chocolate and ground coffee, then crush some leftovers graham crackers and sprinkle that on top of the final layer, too. Cover your ice box cake with plastic wrap and put in the fridge for at least 12 hours. The cake will keep well for up to 3 days. Don't think I will whip my own whipped cream, and I will probably add more coffee powder(just because I love coffee.. ;p)

I followed this recipe before and it turned out nice!! Loads of graham goodness but in a muffin form. Line muffin tins with liners or spray well with cooking spray and set aside. For the muffins, in a medium bowl whisk the flour, baking powder, salt, sugar, and graham cracker crumbs until blended. Set aside. In the bowl of a stand mixer, combine the milk, oil, egg, and vanilla and beat until incorporated. Add the dry ingredients and mix until just combined. Add the chocolate chips and stir in by hand. Using an ice cream size scoop, fill each muffin liner or tin with 1 scoop, about 2/3 full. For the topping, in a bowl mix the flour, brown sugar, graham cracker crumbs, cinnamon and stir to combine all the dry ingredients well. Add the melted butter and mix well until crumbly and looking like wet sand. Top each muffin with 1 heaping tablespoon of crumb topping. Bake for 16-19 minutes or until a toothpick inserted into the middle comes out clean. Moist, delicious muffins that taste kind of like a warm cookie. Makes 15 muffins. Hope you will like it too!! :)

I love making graham cracker crumb bars whenever I have guests coming. It's really easy to make and consists of only the following ingredients: graham crackers, condensed milk, margarine, shredded coconut and chocolate (I like to use dark chocolate but you can use milk or white). There are literally 3 steps to this recipe. 1) Preheat the oven to 200 degC. 2) Grease an 8x8 inch baking dish. In a bowl, stir together the graham cracker (which you have broken into crumbs) and coconut. Pour in the condensed milk and melted margarine, mix until well blended. Press the mixture evenly into the prepared pan. 3) Bake for 10 to 12 minutes in the preheated oven. Remove and let cool. Melt chocolate bars in a microwave or over a double boiler, stirring occasionally until smooth. Spread over the cooled bars, chill and cut into squares. Smells like s'mores time to me! I've made this dessert time and time again. Always a hit. Give it a try :) Ingredients: 1 bag (10.5 oz) miniature marshmallows (5½ cups) 1½ cups milk chocolate chips (9 oz) 5 tablespoons butter or margarine ¼ cup light corn syrup 1 teaspoon vanilla 1 box (13 oz) Golden Grahams cereal (8 cups) Instructions: 1. Grease 13x9-inch pan with butter. Reserve 1 cup of the marshmallows. In a large saucepan, melt the chocolate chips, butter, corn syrup and remaining marshmallows over low heat. Stir until completely melted. Remove from heat; stir in vanilla. 2. Pour cereal into saucepan. Stir until coated with the melted chocolate mixture. Stir in remaining 1 cup marshmallows. 3. With buttered back of spoon, press mixture in pan. Cool at least 1 hour or until firm. Store loosely covered at room temperature. Graham crackers mean one thing to me -- the base to an awesome cheesecake. A quick and simple graham craker tiramisu! Just dip the cracker to the coffee, add mascarpone and cocoa powder. Set it cool for 1 hour. Yummmm!
