Been breastfeeding for 16mths. I am currently pumping twice a day, once around 2pm and the other at 9.30pm. My LO only latches when she wakes up at night and morning. How do I stop breastfeeding naturally without any engorgement?

Try to cut down the pump to once a day. From there slowly reduce the pump and just focus on latching only. Your breast will regulate the supply with it's demand. Lesser latch/pumping, lesser milk supply
